A Word from the Winemakers

We wanted to create a blended white wine, synonymous with pleasure. After the first racking, we tasted all the vintages, thousands of possibilities were open to us. Gradually, we defined a bit more what we wanted to aim for, there were 3 blends left when we decided to involve our friends in the final choice. Blindly, they tasted and chose the wine you are about to discover. Yves' favorite. Its name, just the same, we proposed 3 names and Désir Blanc won unanimously...

Vinification

Night harvest, fermentation at low temperatures, each grape variety is vinified separately. The Viognier is aged on fine lees. The blend varies slightly each year to be as close as possible to the previous year...

Tasting

Crystal-clear robe, intense nose of stone fruits, white flowers, banana, and light peppery notes. A rather indulgent profile, bold onset, finesse, and a beautiful acidic structure that highlights the aromas perceived on the nose. Serve chilled at 12°C, perfect as an aperitif, with Chicken Tajine with almonds, Thai cuisine, or Lemon meringue pie.
