A Word from the Winemakers
This cuvée comes from one of our Picpoul blanc parcels: a grape variety typical of our terroir. After several years of research and trials in winemaking, we have managed to highlight an expression that was close to our hearts. Its name comes from a meeting with one of Croix Gratiot's favorite artists: Nicolas Jules.
Vinification
Coming from a plot selection, this white piquepoul is harvested late and aged on fine lees for 6 months. after several tests, our choice fell on aging in 30% sandstone and in concrete vats.
Tasting
Bright, slightly golden color. The nose reveals all the citrus fruits, Pomelo, Citron, Kumquat. Fresh and structured palate with a nice length. Serve chilled at 12°C, as an aperitif, with Gratinette's herring salad (Sète market halls), Sushi, Alaskan wild salmon carpaccio, plancha grilled parsley squid.
